Healthy Breakfast "Cookie"

Posted By GirlC on Mar 6, 2009 at 9:42AM

This recipe is from Tosca Reno’s Book The Eat-Clean Diet for Family and Kids. She calls them Breakfast Hermits but I think they'll go over better with the word cookie. :)
I’ve included tweaks. She has a lot of “best-quality” olive oil and baking powder “with no alum”– I used plain olive oil and baking soda. See other tweaks below.
Yield: 5 dozen (depends on how big you make them) * Prep: 20 minutes * Chill Time: 2 hrs * Cooking Time: 10 minutes

2 1/2 cups whole wheat flour
1/2 cup protein powder
2 tsp baking powder
1/4 tsp ground cloves+
1/4 tsp ground cinnamon+
1/2 tsp ground nutmeg+
1/8 tsp ground mace *
1/8 tsp ground cardamom+
1/4 tsp sea salt
1/2 cup agave nectar **
1/2 cup olive oil
4 egg whites++
1/2 cup blackstrap molasses (unsulfured)
1/2 cup applesauce
1 tbsp vanilla
2 tbsp plain low-fat yogurt
1 cup raisins
1 cup unsalted raw slivered almonds
1/2 cup unsweetened dry cranberries

Sift all dry ingredients in bowl (including spices).
Cream olive oil and agave nectar together until smooth.
In separate bowl beat eggs then add olive oil mixture. Mix well. Add molasses, applesauce, vanilla and yogurt, again mix well.
Add raisins, cranberries, almonds and dry ingredients. Mix well. Dough should form a ball.
Wrap with plastic and refrigerate.

Preheat oven 350. Line cookie sheet with parchment paper. Make small balls and press down lightly. Cook 10 minutes.
