Becky G's Erewhon Smoothie Is the Perfect Homage to Horchata — Here's How to DIY It

Wake up, babes; a new Erewhon smoothie just dropped. Erewhon Market, the upscale grocery store chain in LA famous for its Instagrammable smoothies, has previously partnered with big names like Hailey Bieber and Jay Shetty to create custom smoothies in their likeness. (For example, Bieber's strawberry-glaze smoothie is chock-full of ingredients that support her famously glowing skin.) Their latest release is with singer and actress Becky G, who just launched her own smoothie, Becky G's Swirl-Chata, on Aug. 15.

Becky G describes the smoothie as "the perfect homage to the traditional horchata." In the month that it's available at Erewhon Market, a portion of the proceeds will be donated to the Just Keep Livin' Foundation and Justice for Migrant Women. And it gets better — we haven't even told you about the smoothie yet.

Horchata is a sweet, milky drink that's thought to have originated in Northern Africa, later becoming popular in Spain and Mexico, according to the Food Network. It's made with rice, milk, vanilla, and cinnamon — and this smoothie does it justice, plus adds health benefits to boot. It's made with a blend of almond milk, freshly made rice milk, and coconut water, plus bananas, dates, vanilla-coconut collagen, and cinnamon. As if that didn't sound delicious enough, it also gets topped with homemade "superfood" caramel and coconut cream.

It's worth noting that Erewhon, being Erewhon, also includes two tablespoons of tocotrienols (a form of vitamin E) and one serving of Eidon Electrolytes ($18) in the recipe. As I live on the opposite coast from Erewhon stores, and I'm more interested in trying the flavor of the smoothie than the exact health benefits, I left these out of my copycat. (If you want to add them in, feel free!) Likewise, I left out the superfoods — Dandy Blend ($23), a barley-based coffee alternative, and the Chinese herb he shou wu — from the caramel, but I otherwise loved making the sweetener myself. Don't let me stop you from adding the superfoods in, but the lower-maintenance recipe below will give you an almost identical flavor profile to the Becky G Swirl-Chata while spending a little less cash on ingredients.

While I did simplify the caramel, I wanted to get the smoothie flavor as close to the original as possible, so I used as many of the same brands as I could find, including Malk Almond Milk ($6), Lundberg Farms Organic White Long Grain Rice ($8), and Primal Kitchen Vanilla Coconut Collagen ($30). My rice-and-almond-milk base had amazing flavor from the fresh rice and high-quality almond milk, so if you're able to find these and make your own (thankfully, Whole Foods and Amazon carry everything you need), I highly recommend it. And one heads up: if you opt to make the rice milk at home, you'll need to prep that and let it sit for 6–8 hours in the fridge.

If you suffer my same fate of living thousands of miles away from an Erewhon or can't make it to a store before Sept. 14 (when the drink's limited run comes to an end), there's no need to feel left out from the Becky G smoothie drop. Check out the sweet, cinnamon-y Swirl-Chata recipe below.

Becky G's Swirl-Chata Erewhon Smoothie

Prep Time5 minutes to make the maple-date caramel and almond/rice-milk base, plus soaking overnight

INGREDIENTS

    • Maple-Date Caramel:
    • 16 dates
    • 1 tablespoon maple syrup (you may need more or less depending how soft your dates are)
    • Smoothie:
    • 1 cup white rice, such as Lundberg Farms Organic White Long Grain Rice
    • 2 cups almond milk, such as Malk
    • 1 can coconut cream
    • 2 ounces coconut water, such as Vita Coco
    • 2 tablespoons Primal Kitchen Vanilla Coconut Collagen
    • 2 teaspoons cinnamon
    • 1.5 bananas
    • 2 dates
    • 4 ounces ice

    INSTRUCTIONS

    1. Soak the rice in the almond milk for 6-8 hours in the fridge.

    2. When you're ready to make the smoothie, blend the rice-and-almond-milk base on medium for 4–5 minutes and strain with a few layers of cheesecloth.

    3. Then, make the Maple-Date Caramel. Add the dates to a food processor and process until you have very small pieces. Then, slowly add the maple syrup until there's enough liquid to bind the dates together and form a paste. You may need to use a little more or a little less, depending on how fresh your dates are. (If they've been sitting in the back of the fridge for a while, no judgment: just soak them in hot water for 30 minutes to help them soften up. Trust me: soft dates make a huge difference here.)

    4. Once your Maple-Date Caramel is ready, swirl it along the inside of your chosen smoothie cup with the coconut cream to get that gorgeous Erewhon swirl.

    5. In a blender, combine 1 cup of the rice-almond milk with the coconut water. (Save the rest of the rice-almond milk to make more of this smoothie tomorrow.)

    6. Add the collagen powder and cinnamon, followed by the bananas and dates.

    7. Lastly, add the ice, and blend until smooth.

    8. Top with a dollop of coconut cream, sprinkle with cinnamon, and enjoy.

    Notes

    The Erewhon recipe also includes two tablespoons of tocotrienols and one serving of Eidon electrolytes, which are omitted here. If you want to skip the homemade rice milk, you can use store-bought, adding 6 oz. of rice milk and 2 oz. of almond milk. (Just don't omit the rice milk; it's key for the horchata flavor.)
